Barm Brack


So finally i have decided to start this blog. Firstly I needed a place to put all of my own baking pictures and disasters in one place where I and hopefully you will enjoy reading and trying out some of my recipes and favorite reviews of cafes and restaurants all over the world (mainly Europe) haha. The picture above is a tried, tested and loved Irish Halloween tea brack. So sit back, pick a recipe or a review and enjoy!

Nonnies Tea Brack

What you need:

250ml     Black tea (hot)
140g       Soft brown sugar
340g       Raisins / Sultanas
280g       Self raising flour (or plain flour plus 2 teaspoons of baking powder)
1             Large egg

What to do with it:

1. In a bowl combine the hot tea, brown sugar, and raisins/sultanas. Leave overnight to soak and raisins to plump up.

2. The next day add the flour and egg and mix well till no lumps or flour are visible.

3. Pour into a well lined and greased tin (I love my loaf tin for this). DO NOT forget to grease and line with baking paper or the cake will not come out.

4. Bake at 170°C for 1 hr. It should be a deep golden color and if in doubt use a skewer at the centre to check. If it comes out clean its cooked, if not give it some more time and check again.

5. Enjoy a slice with a cuppa and hopefully your feet up.
